Fresh Beet Salad with Hummus Dressing

A combo of heirloom tomatoes, beets, cucumber, red onion, and a delicious ass hummus dressing that is SO easy to make. Topped with cracked pepper and some microgreens for all the extra b*tches out there… *raises hand*. I’m trying to get that summer body… so instead of eating thai food every night, I can have this fresh and bright salad first. πŸ˜‰ That’s better right?!

Ingredients for Salad:

  • 4-6 small beets, cooked and diced, (dime size for all)
  • 1 heirloom tomato, diced
  • 1/4 cup red onion, cut into small strips and halved OR diced
  • 2 small cucumber or 1 large, diced
  • freshly cracked pepper
  • microgreens, as garnish, optional
Hummus Dressing:
  • 1/4 cup hummus
  • 1.5 tablespoon red wine vinegar, give or take
  • cracked pepper and salt, to taste
  • 1 tsp dried oregano

Instructions:

  • Mix dressing ingredients together in a small bowl until smooth, you may want it thinner, if so, add a bit of water, slowly, until you’ve reached your desired consistency.
  • In a medium bowl, mix all veggies, minus the microgreens, add in the dressing and stir. top with fresh pepper, and microgreens if using.
